I think 85g is the best one. It does stretch, but less than other ones.

250g doesn't stretch at all in all directions, it's really stiff, but you can feel it's really heavy

Just a little tip: because the center panel is one piece, I think it's easier to sew spine, upper spreader and center T reinforcements before gluing all panels together.

To be honest I'm not able to compare it with any other dogstake as I've never used one.

The only problem I've got is with the bearings: sometimes the lines go outside the groove. Maybe it should be bigger? I tested V-groove bearings from aliexpress some time ago , but they were even worse.
